
Woodfrog Bread – Satisfies The Senses
Melbourne, the coffee capitol, is also starting to showcase its talent with that another important staple, bread. I am so thankful we have more artisan bakers popping up around Melbourne. Next time you sink your teeth into a quality loaf just think when you’re sleeping they’re baking – how fortunate are we!
Woodfrog Bakery of 108 Barkly Street, St Kilda have recently opened two new shops, in the Tok H Centre, 459 Toorak Rd, Toorak and in Kew, just opposite Leo’s Fine Supermarket. They do exceptional sourdough breads. I checked out their Soir loaf (pictured, $6.50) which is a mix of wholemeal wheat, rye and malted barley but not at all heavy and very moorish. Their breads have an enticing, blistered crust which is thin and crispy, a beautiful aroma, a bubbly, moist crumb and a fabulous taste – bread that really satisfies all the senses. With the exception of their baguettes, all their breads undergo a 28 hour sourdough ferment, which they say gives it a caramelized, thin crust and open moist crumb.
